Yes, I later found this out and have been able to reset the phone now. Thanks so much.

You should know though that the kernel version and build(X551-G808-A1-L-20160325) of this still reads almost same as that of the previous custom ROM, only the dates changed. And the system update still reads "Your system in the latest version". So it seems this is a custom as well....??

The "unfortunately com.google.process.gapps has stopped" and similar errors is still happening. Just started again this afternoon. Please help!!!

It brings up pop-ups of
-unfortunately com.android.process.gapps has stopped
-unfortunately com.android.process.acore has stopped
-unfortunately android.process.phone has stopped
-unfortunately android.process.media has stopped
-unfortunately Google Services has stopped
-unfortunately Instagram has stopped
-unfortunately LookOut has stopped

It just does this randomly and stops every app I have open on the phone. It also shuts out all networks so it appears like there's no sim on the phone. The pop-ups remain continuously so I can't do anything else on the phone until I restart it. Then it's back to normal for some hours or a day, then it happens again

Hmm.
First off, you need to make an NVRAM and Secro backup in TWRP.
Do you have Lollipop TWRP for your model

No, I don't have lollipop TWRP. Honestly don't even know what those you just mentioned are. Enlighten me please.

TWRP is a custom recovery which allows you do quite much as opposed to stock recovery like backing up, restoring, flashing custom ROMs etc
another alternative is to dump secro and nvram (scatter format) using Miracle Box @ https://www.hovatek.com/forum/thread-13347.html
I think this'll be easier for you as opposed to TWRP

From what I understand in the link, seems like the process is to create a backup of phone files and nothing else. How does that fix the error pop-ups On the phone? Or there's more to the process?
