You can't use fastboot to extract or backup..and from my experience with Intel based dual OS tabs, extracting while off seems unlikely

I actually tried buying this device for tests a while back but it was out of stock then.
Now, here's the deal.
I wouldn't advice trying a random boot.img on the device because that could make things worse. There's a good chance that your device is a clone of another dual os tablet (just under a different name) so if you're somehow able to find this out (by googling your specs and comparing) then you're back on track.
If I were in your shoes (given there's no rom or device to backup), I would try to get a working TWRP so I can enter TWRP either by booting directly or from fastboot (fastboot reboot recovery) .
Once in TWRP, I can then access internal storage and move stuff over to SD card.
I can then try to undo whatever magisk did via a flashable zip.
As for finding TWRP, that'll be based on devices with identical specs (trial and error) and its safer to do such with recovery than boot
This is a mountain of IFs right?

what @hovatek just replied and you could also consider mailing innjoo support team and see if they can provide you a link to download the firmware or backup from a working innjoo flex if you have access to one

Keep us posted.
BTW, If you can still boot into Windows then there must be a way to access what's stored in the Android partition
