As you may have noticed after flashing a tecno device u might still end up in boot-loop or stuck on tecno logo.I recently discovered this is caused by failure to flash USRDATA IMG which is never present in most MTK DRoid Tool backups,so i decided to go nuts on my Tecno H5 since it was already bricked and instead of selecting H5 system image i used P5 system image,(Android) Cache and UsrData. and it worked but the phone is now changed from Tecno H5 to Tecno P5... see pic below
u will most probably end up with invalid imei but that can be solved with the help of mobile uncle

if you flashed successfully and still end up in boot loop or stock at logo then simply do a factory reset in recovery mode or an EMMC wipe in factory mode.. that should fix it

userdata and cache are truly very optional as x3non said. a simple factory reset in recovery mode (vol up + power) and eMMC wipe in factory mode (vol down + power) will do

So what does the userdata image contain...because from my understanding I guess it's the gapps,

No. Those are system level apps.
Data contains userdata like app data, contacts, settings etc

Yes, that's why gapps remain after you wipe data / factory reset
