to unroot and prepare for installing new update, flash back "boot, recovery and system" from the backup you made earlier on.
to root after installing new update, first dump the firmware in scatter file format so you'll have a firmware based on the new update. then depending on what was updated. if the current custom recovery you used to root previously doesnt work, then we can always port another based on the stock recovery of the new update

Wow! Sounds like much of a pickle... I'll keep this in mind tho. But you haven't heard about flash fire?

If you're particular about OTA updates then you could use Magisk instead of SuperSU

follow the method as described @ https://www.hovatek.com/forum/thread-20437.html to install magisk instead of supersu but you are to use the TWRP that was ported for your device

I've rooted and installed magisk. Thank you very much guys. I'm grateful.

Still getting around it tho... Entirely different from SuperSU. Any pointers? And the twrp is non-touch. I had to use a USB mouse ft OTG.
