you must have made a firmware dump before root your device, depending on how you rooted, just flash back boot, recovery and system from your backup to unroot

I didn't. if so i would not be taking this measure. So I've seen list of firmwares provided by hovatek ; cant one fit my build number there? Or other things i could try.

You best flash a firmware for your build but the rom for your build isn't yet listed @ https://www.hovatek.com/forum/thread-20230.html .
If you must try another build's file then you best first dump your firmware in scatter format using Miracle Box @ https://www.hovatek.com/forum/thread-13347.html
How exactly did you root? Did you ever flash a custom recovery or make any modification to /system partition?
this will tell what files you're to flash in order to unroot

I flashed it through twrp recovery. I tried to unroot from the super user app and the phone bricked, then i was instructed here to flash the root back to it and the phone came up again. But now, i want to unroot it.

if you used TWRP, then it means you'll need to flash stock boot, recovery and system
have you been able to backup your current firmware successfully?

Moreover, have a guy that has same build number with mine but he has updated to oreo and now has this build number x572-H5312AD-O-180503v139.... So I'm thinking what actually matters x572-H5312AD- variance and rest just signifying android version and date.
