Problem is not in meta-inf but within ROM.
How you ported your XOS rom and wich kitchen you had used..
If you deodexed rom (>android 6.0) in assayed kitchen then i can guaranteed that it will not boot.
You have to format system in custom recovery before flashing and factory reset after flashing.

My stock ROM is odexed the apps in the system are one with .apk and one in .odex I didn't touch anything on the kitchen I just created a flashable zip only.

When boot.img has verify flag in fstab then system does not boot.
Have you patched your boot.img to remove dm-verity??

Quite simple process
1. Extracts boot.img in AIK kitchen or carlive kitchen then navigate to ramdisk folder and open fstab file (named like fstab.mtkxxx ) or something else.
2. open that file in notepad and then remove text/flag *verify* from each mount points like system ,cache and data etc.
3. Also delete verity-key file present at the root of the ramdisk folder.
Then repack boot.img
