It says "unfortunately, contacts has stopped". I cleared data in the settings, and cleared cache yet its still not working.

What you need is a custom recovery. You don't necessarily need to root.
Have you backed up your phone's firmware?

Can I get boot image for Gionee GN5001S MT6735 Android version 5.1?

Stock means factory image that is not modified while custom is modified, the customized one has the ability to do what the stock cannot.
Check @x3non's reply for how to backup your phone's firmware and obtain the boot image.
